Question re food hygiene

I work in a small business and as part of out basic food hygiene training done 2 yrs ago was told that we could not freeze fresh products as even if we did we still had to use them before date on packet. Does anyone know where I can find something on this as I have googled it and there is so much stuff about food hygiene i dont know where to start .

I've frozen fresh meats before the use by date and defrosted weeks after and eaten, never done me any harm.

With all due respect what you do in your own home isn't the same as what you do in the workplace regarding food storage...

I know its ok to do it in own home but this is a business and Im not sure after being told 2yrs ago we cant now being told that possibly may just have been old boss being OTT , just dont want to get caught out .

true but I've watched a few kitchen nightmares over the years and that practice does seem pretty much widespread

The answer is simple. Contact the Environmental Health Office which covers your area. EHO's don't just exist for the nastier side of their job, as others see it, but are also there as centres for Information and Advice too.

My experience with EHO's over the years is that they welcome enquiries such as this so they can advise correctly before any potential problem escalates.

Try the Health & Safety Executive website (HSE) search for food hygiene they are generally good for downloadable info.

Also check out the food standards agency- you can download a PDF that will give you info you need.

had a new freezer delivered today and have to admit Im blooming glad we have and that the old boss was so wrong as the amount of food that I throw away is just so wrong .

ok i have worked in catering for 25 years the rule is simply when you frezze anything it is good for 1 month only and must be defrosted in a fridge over a 24 hour period and all products must be cooked to over 80 degree's to ensure there is no bateria

for products that dont require cooking ensure it is fully defrosted and then consume within one day and never allow it to go above 3 degree's

The EHO has just told me that so long as it is dated the day it is frozen we can then take the information from pack as to when it has to be used by .

HSE website is about as much use as a split condom but the rules are store below -18 only store for 3 months and use within 48 hours of defrosting but you must defrost in the fridge and keep it stored in the fridge or under your display fridge if you have one i did own a cafe with my hubby who is a chef and you can find anything you need in the better food for bussines book that you should have if not get it from HSO at your local council but you must put the date you froze the product on the packet and when you take it out the freezer date it again and also right the date's on the paper work ie recipt you got with the product if you need to know anything else just ask

I used to be a chef. I have never heard of you not being allowed to freeze your own bought stuff. Nor can

I think why it would be dangerous in any way to freeze your own bought stuff. You should never re-freeze stuff that has thawed out.

They may have changed the rules though. Ring up the local health inspectors who go around inspecting restaurants, hotels, bars etc they should have the definitive answer.
