I'm not a vegan but I an a chef and I did cater for a while group of vegans a couple of summers ago, I was onsite for 5 days at a time at an eco retreat in llanberis near Snowdon. I had to turn to with enough food for 20 vegans for 5 days, 3 meals a day. Last meal of the week was always nettle soup at I found a big patch behind the kitchen and had usually used everything else up. It was a learning curve for me as a chef and I hadn't specialised before. So I have a few recipes now... Including vegan meringues.

Refined sugar or any sugar ? Do you sweeten with anything else ? Agave syrup or stevia based?

Just use the liquid from a tin of chick peas,it works the same way as egg white,you have to experiment a bit but it's worth an afternoon in the kitchen,it makes great mayonnaise as well.

I dont eat refined sugar. Artificial sweetener is fine. Fruit sugar is fine. Algave syrup is fine

I really hope you avoid anything with aspartame in it .. Hideous stuff and probably worse than the sugar ..

Recipe doesn't need honey you can use syrup instead or no honey or syrup at all

Seeside, I have been a chef for 30,years and I didn't know many either. I only learnt them because I got paid a massive amount to go and cook for them and it was to good to turn down.
