"score the fat side of the breast by making shallow cross cuts, season with salt and pepper, heat a tablespoon of oil in a pan over medium heat, heat till hot but not smoking, then sear the breast fat side down until much of the fat melted away, and the skin turned brown as crisp, about 4 mins. Flip the beast over and sear the other side for another couple of mins. Pour off most of the fat, slide the pan into a pre- heated oven 180 C and cook until it is 55 c in the thickest part, approx 10 mins. let the meat rest for 5 mins or so. Other ways, if you can't be bothered with the above, cut into slices, pan fry with oil and seasoning, DONT over cook it, keep the meat pink. Slow cooked duck is good too, can brown it first by quickly pan frying, then slow cook. If you simply chuck in some vegetables, a stock cube and cut some duck breasts and put them in a slow cooker for 5 or 6 hours, that will taste good too.
