Toasted sandwiches

Kids have asked me to make them for lunch, haven't had them in ages!

Normal ham and cheese for us.

Are you more adventurous?

I make mine in a frying pan with a few different cheeses. Using thick fresh bread and whatever I have to squash them down.

Take them out when cooked. Grate cheese back in the pan and put the toasties back in.

The cheese drips as you take it back out and firms up.

It's a jamie Oliver thing but easier to clean up.

Probably chicken, cheese with a bit of pesto for me

Tuna melt (tuna in vinegar, cheese and onion)

Banana and Nutella

Cheese and bacon

Might have to have one ourselves now.

You get a vertical wall of thin, crispy melted then hardened cheese as a bonus but it's the cleaning up bit that's the best

Span and egg.

Mix up the egg, pour a bit onto the bread, lay the spam ontop then more egg then the other slice of bread.... Once it's cooked it goes a bit like scrambled egg..... Lush

My favourite is the Reuben sandwich.

Recipe below; it's typically made with corned beef in the US which is very different to UK corned beef, so I use decent ham and use chopped Cornichons rather than Dill pickle.

Make sure the sauerkraut is cooked, rinsed and squeezed dry; you don't want a soggy sandwich!
