Secret of perfect rice is towash/rinse rice til water is clear...min 5 rinses.. then put in pot and add water til rice is covered to depth of first joint index finger...bring to boil simmer for 12 mins then put tight fitting lid on turn off heat and leave for 20 mins til rice has absorbed water...perfect fluffy rice every time...if you want pilau...use stock instead of water and add cloves cardamom pods bay leaves and a pinch saffron
