Some voluntary work maybe. Or watch the EastEnders box set from episode one.

My company used gardening leave when someone handed their notice in to go work for a competitor. It's basically paid to not work notice period.

Handed my notice in as moving jobs. As it's a competitor I've been told not to work and stay away on full pay until the end of my contract.

Catch up on reading, going to places you don't get time to visit, walking round supermarkets really slowly at 7:45 preventing people who need to get to work at 8 from getting their shopping

If it was me in your position I'd use the time to relax. It's not often you get a paid chance to step out of the rat race. I'd catch up on reading, sort all the stuff I don't normally get time for and generally get ahead with life admin before stepping back in. Several Sunday night's not thinking about work in the morning are something to be favoured.
