Christmas cake

Horsham

Seeing as the big day is getting closer, I am about to bake our Christmas cake.

What alcohol do you feed yours with?

I have tried whisky, rum and brandy. I was thinking is there another liqueur I haven't thought of.

Port is a favourite tipple in our house and yeah I like the sweetness it brings x

Brandy...

Cheap brandy ideally not the good stuff.

Start when the cake is still hot just out of the oven poured over the top of the cake and left to filter through the cake as it cools

Dissarano, almond liquor with a bit of Brandy too, it's been the most popular.

I haven't made one this year, but if I do it's made end of August /start of September so there's chance to feed it a few times. I always use brandy.x

I use almonds and flour mixed for the cake. Not sure dissarano works with that but I'll give anything a try...

2 of mine were made in August they are soaking in brandy.

3 will be made tomorrow to be soaked in whiskey

The rest the first weekend of December (14 of them) no booze allowed so I soak the fruit in orange or cranberry juice.

Blackberry liquors is good of soaking

I normally do it a week ago, then give it the liquor using one of those food syringes.

did 2 cake last week i soaked the fruit over night in bottle brandy .no need to add it after lol . it smalls great just want eat them now ,

That's why I leave it so late to make them, I end up eating them before the big day.

I use Port and Brandy to steep the fruit and feed the Christmas cake.

I make quite a few Christmas cakes each year, and always get repeat orders.

I usually boil my fruit with butter and sugar and some booze before I add flour etc. Makes a really good cake and gives it a great head start as all the fruit soaks up the juices.

My nanna used to make lovely Christmas cake but you had to wait 2 yrs for it cos that's how long she used to 'feed it' brandy for. You could get pissed off the fumes lol

I only use Brandy, which happens to be my favourite spirit. I pour some on every day for a few weeks. It smells divine

I made a cake like that a few years ago, I had to dry it out before the marzipan would stay on it.

My hubby took some to work one day cos they didn't believe him when he told then how strong it was. People at the other side of the office could smell it when he opened the tub. No one dared to try it cos they had to drive home lol

You can make a booiled mix and use a sugar syrup made with dark brown sugar..the booked recipe I find makes a moist cake anyway, just use fruit juice instead of booze.
