The only time I liked that was when I was in my 20s and the local cafe did pie, chips, peas and gravy. Their chips were handcut and lovely with gravy.

Chips go with so many things. Gravy works. As does mayo. As does ketchup, brown sauce, salad cream, coleslaw, various mustards and the joy that is burger sauce. The trick is in not over condimenting said chips and considering any chip accompaniment. Chips and pie? Ketchup and gravy. Chicken and chips? Mayo or coleslaw. You get the idea.

Oh, and proper poutine is food of the gods. And it won't work without gravy. So chips and gravy is not inherently wrong or weird. It's all about preferences.
