Dark Nights Food Time

So yesterday I made a big pan of my favourite soup which consisted of a bag of celery one big leek a large carrot a bunch of spring onions and 3 decent sized spuds....boiled for 40 minutes then liquidised.

Proper dark night food and if trying to loose some weight before Xmas it's great if you don't overdo the bread and butter

But I need some more decent recipes like this......any ideas?

I'm no chef but if you cut out the spuds (1 or 2) and it'll be even better for you - change it to squash, sweet potato or maybe oven baked aubergine (don't know how that'll blend) but if you're blending, less slow release carbs would sit better. Try pulses too but don't blend just freeze?

I'm sure you have OP but invest in a slow cooker and pick up a few books for £3 -£4 each from cheap book shops/charity shops.

Trust me the blending is good and just add two store chicken stock cubes and salt and pepper to taste.

I love making soup, I'm a bit addicted to pea and ham soup at the moment, low fat and very tasty!

I like leek and potato and carrot and coriander too

every week i make a pan of leek and potato soup - throw in some sweetcorn if i have some unused- spoonfull of mustard - even through the summer - i have it after a long shift when i cant be bothered cooking - love home made soups

Homemade minestrone or vegetable and pearl barley are our winter family favourites, the freezer is always well stocked ready for fast lunches and suppers

Cant beat pulses...boiled the left over full chicken for a hour and half add veg and pulses. Absolutely lovely
