Cardiff

38mm thick. Sirloin. Dressed in garlic butter, parsley, s+p and chilli. Bbq'd over charcoal not gas. Medium/rare.

Argentinian is about the best you can get with Angus in 2nd place. Haven't tried the Japanese beef but from what I gather it's the best.

Get your steak from the butcher cut from the loin not pre packed and not from a supermarket.

Correcting spelling mistakes. A stickler for grammar and large thumbs don't go well together. One should be able to remove post if you are the OP.

Lean. No fat or gristle. And well done. VERY well done. No pink. Not even a little bit.

Yeah yeah, food snobs, go ahead - tell me I'm a heathen .. but I know what I like!

Was it still flipping back and forth on the plate and mooing?

Depends on the cut, but if it's good and I trust the chef, somewhere between moo and blue
