I've got more catering gigs coming up (mostly under an old army tent, walking on a palletted floor with gas bottled supplied burners of dubious capacity and an oven that gets tired) and I stick to vegetarian/vegan meals.

I have a few good standby recipes that always go down extremely well and my ability to make something gorgeous from nothing is legendary (sweet potato and peanut bake anyone) but what would you like to see on the menu?

North Bucks

Roast potatoes. Whilst at Uni I would live off them.

Failing that got to go with Tamarin Squash and Halloumi on a skewers.

I can't give them a plate of roasties! I won't have the time to skewer and cook anything, it will need to be trays or big saucepans of food.

Sweet potato falafels with a spicy tomato sauce. Falafels easy to make in bulk. Tomato sauce easy to make in bulk. Cook falafels in the oven in batches. Serve on a flatbread covered with coriander and a handful of salad ..... I'd part with £8 fir that (about the usual for decent fair at a festival)

Although tent buddies may have a wind problem

You can blend pretty much any pulse/veg combination then do a stuffed cannelloni tray bake

mix with half nut milk half water so it's really watery and it goes a very very long way but keeps that taste ..... we used to bulk buy from suma or through our local health food co-operative ... was dirt cheap then

you live in leicester area ... you should be able to do deals on products direct from some of the larger independent asian shops as they are often importers too

I do a Red Lentil Tikka Masala with Rye Barley Roti - that is lovely. And pretty quick to make. You could skip the roti and use chapatis instead
