rare to medium rare depending on the cut, seasoned with salt, pepper and worcestershire sauce, finished with a bit of butter at the end. Usually have with sweet potato and green beans, asparagus and tenderstem broccoli

T-bone is my preference, I find fillet has to be done to perfection or it's just not worth it. Sirloin is a run of the mill steak. There's a brilliant steak house in Derby that cooks everything to perfection and gets my juices flowing

If you rest your steak properly and let it get to room temp there isnt really blood coming out and when you rest it even when rare its juices coming out, a properly rested steak shouldnt have anything pooling on the plate this usually happens in crappy restaurants that dont spend the time on and just wack from pan to plate

Ribeye....Rare. As in if the cow was killed in a sunny day it's probably done!

Served with peppercorn sauce, mushrooms and tiger prawns wrapped in pancetta.

There are only three ways to cook a steak.

Blue, rare or medium rare.

Anything more and you are wasting good red meat, once its past medium rare there is little or no real taste to the meat and you might as well be eating cardboard.
