28 days at least. and Medium rare.

People who have it rare should not be allowed steak.

As the phrase goes, if the meat is mooing, its time for chewing

After 28 days hung up in a butcher's fridge can't see it mooing much.....flash fried both sides with garlic and peppercone sauce, mmmmm heavenly
