what phone you got? you should block them before deleting them also otherwise they can still message you.

go on your conversation, swipe left (if on iphone), this will bring up a 'more' option. you can mute then delete from that.

I think they need to be in your phone contacts to WhatsApp them. Definitely block them first though go to Settings - account - privacy - blocked contacts, then it tells you what to do
