I don't have to be posh, a good quality tasty ham in a Polish shop costs less than packet ham in big chain grocery shops

there's probably an actual scientific explanation that involves chemistry.

don't they freeze meat for ten years? so it's like ten year old flesh that should have decomposed by now but has been kept 'fresh' artificailly.

Possibly the Sulfur Dioxide? Its used as a meat preservative.
