How come you can buy crusty and soft baps? Are they made differently? ie do crusty bags have an added ingredient to make them so?

I've never heard of crusty baps. We call them crusty cobs or crusty rolls.

It's always intrigued me. I love me and crusty bap (cob/bun/roll*)!!
