Turkey Crowns

How do people cook theirs? I've bought giant roasting bags which I'm hoping this 2.4kg crown will fit in. Latice some streaky smoked bacon on the top and massage the meat with butter? I haven't got a clue and love how the responsibility falls to me!

We always brine our turkey for 24 hrs first, we'd do the same with a crown also, guaranteed succulence, loads of methods online.

sure I saw on the TV that you perch it on 4 onions and then put some water on the bottom of the dish, keeps it moist. Rashers of bacon over the top

Yup. Soak it in a brine solution with loads of herbs.

I saw a cook on the TV once say your ment to lift the skin n massage the butter in just under the skin then put orange slices under the skin. Bit of a faff if you ask me. xxx

Nicked from a Master butchers website....

'Cover the breast with strips of bacon or smear with softened butter then cover loosely with foil. Preheat your oven to 190°C (180°C for fan assisted ovens), 375°F, Gas Mark 5. Less than 4kg weight? Cook for 20 minutes per kg then add another 70 minutes cooking time at the end.'

Put Orange halves in the cavity (not stuffing) and it takes steam during cooking to keep the bird moist. Similarly you can do it with lemons in chickens.

Massage turkey crown with salted butter, season with black pepper add a little water in the tin foil and loosely cover. Times will vary obviously but opening up the foil for a few mins to crisp up the skin finishes it off nicely.
