Gonna sound weird, but a US band called NinjaSexParty have released a couple of albums called "Under the Covers" where they cover their favourite songs.

From those albums, my favourite cover songs are:

Limelight (originally Rush) and Elton John's Rocket Man

Coming late to this thread I just knew someone would have nominated this - it's in a class of its own (and always makes me cry).

Thirty Seconds to Mars' version of Lady Gaga's 'Bad Romance' is well worth a listen too.
