The bull is the new guy who's not a part of the couple - whereas the cuck/cuckold is the existing guy (the husband). So the bull 'cucks' or cuckolds the husband.

Quite why whoever assigned these terms decided to use a mix of bird and bovine metaphors, I'll never understand :p
