The land of grey peas and bacon

So this year for the dreaded C word I've decided to make some gifts and I was going to make some homemade alcohol...not hooch or beer but flavoured stuff and I need some suggestions

You can home brew wine, but there is some kit you would need to buy before making it. If you started now you would just about be able to bottle it before Christmas day, but then you need to leae it to age for a few months.

I started making it a few months ago.. So far I have:

5 Gallons of Merlot

5 Gallons of Cab Sav

Just over 1 Gallon of Strawberry

a Gallon and a half of blackberry and apple

Aparently putting sweets into vodka is quick to make, sarsparilla tablets, cola cubes and werthers originals i know can be used

Currently toying with the idea of Blackcurrant rum after seeing some in a National Trust shop

Slow Gin takes some time, but most of the others I've managed to do in 48hrs.

Fruit juice ( preferably 20g or higher sugar per 100g ) and champagne yeast also works in around 10 days, you need to buy airlocks for this

250ml/9fl oz single cream

1x 397g/14oz tin condensed milk

350ml/12fl oz Irish whiskey

1 tsp Camp coffee essence

3 tsp chocolate sauce

1 tsp vanilla essence

1 tsp almond essence

Method

Sterilise the bottles for the liqueur: wash in very hot water or on the hot cycle of a dishwasher. Preheat the oven to 160C/325F/Gas 3. Place the bottles on a baking tray and dry in the oven for 10-15 minutes. Leave to cool.

Pour all the ingredients into a blender and blend on high for 30 seconds. Add extra Camp or chocolate to taste.

Pour into sterilised bottles and store in the fridge. (The liqueur will keep for up to two months.) Shake well before using.

Orange liqueur. Easy.

Suspend an orange about 1/2 over vodka/liquor in a sealed jar.

About two weeks later. Enjoy.

Skittles vodka. Separate colours/flavours. Takes about 4 weeks for all the flavour to bleach out. Looks kinda cool in small multicoloured gift packs.

OP spiced rum is always a winner. I use a couple of bay leaves, a clove or two, some peppercorns and a vanilla pod. Maybe some orange zest. Only takes a week or two, depending how heavily spiced you want it.

We've got a rotary evaporator at home that can turn 40% alcohol to around 80% alcohol in about 2 hours while extracting the flavour from pretty much anything else you add to it.

Only about £20k if you want to buy one

They're meant for far more scientific applications but then a few cocktail bars around the country discovered what you could do with them.

No, it involves rhubarb, sugar, orange zest and cloves being steeped. It's delicious. I loved spiced rum when I drank. Damson gin tastes like Ribena and is another good idea OP!

Anything "golden" will do. You can pick up Cockspur golden rum for less than 15 quid if you shop around, or Mount Gay is nice if you want to spend a little more. Bacardi Gold/Oro if you want to splash out.

If you don't like someone vodka is very efficient at extracting capsasium from chillies.

Personally I have 10 gallons of strawberry melomel (fruit flavoured mead) on the rack aging and another 10 gallons in fermentors but this will need at least 6 months aging in the bottles. Once that is processed I will start a 5 gallon batch of pear melomel.

Here's a couple I've done:

------------------------------

Raspberry and Orange Moonshine

• 1 bottle Scotch Whiskey

• 1 punnet Raspberries

• 1 bag Caster Sugar

• Zest of half an orange

• Handful of thyme sprigs

Whack the lot in a big jar, store in a cool, dark place and give it a good shake once a week.

Ready to drink in 3 months. Best after 6 months.

------------------------------

Special Toffee Vodka

• 1 bottle Vodka

• 1 bag Thornton's Special Toffee

Remove a small quantity of vodka to make room.

Break the toffee into small pieces and drop into the bottle.

Seal the bottle and shake well every few hours for 2-3 days, until toffee has dissolved.

Put in the freezer for a few hours before drinking.

ive got 2.5 litres of damson gin on the soak, also lime vodka and apricot vodka. i also have 75cl of last years sloe gin maturing nicely

Saw a couple of kits in Wilkinsons.

Strawberry cider and some kind of flavoured beer for £15.

Apparently they make 20 pints or something like that.

Fill the jug with water, put it in a warm place and let it sit for 48 hours!
