Had a brew made for me today, had to watch as they put the milk first, Stood biting my tongue in horror as they then poured hot water over a milky teabag. Just wrong!

Please tell me no one else does this beverage sin.

Unless you're still drinking out of fragile China cups, there's no longer any need to put milk in first

Yep, this for me too. Nobody has ever complained about the tea I've made, with milk in first.

Black tea requires freshly drawn water as close to boiling point as possible to release the flavours. Leaves, in a warmed teapot. Always.

Scientific research has been done on this. Most people who think they prefer the milk put in last are wrong. Given a blind taste test, they prefer it when the milk goes in first; when they think they know which cup had the milk put in last they go for that one, even when they're wrong. Their expectations override what their taste buds are telling them.

If you put the milk in last, it warms up too quickly. This damages enzymes in the milk and turns it slightly sour. If you put the milk in first then add the hot water, the milk warms up a little more slowly, the enzymes aren't damaged and the milk isn't soured.

Central

Poured from a teapot then milk goes into a cup first. But with cup made tea, where the cup has the role of teapot, the water is first of course.
