Why do they taste so good?

Cooked a couple extra tonight so I could have a cold sausage sarnie at work tomorrow. But no, as soon as I took them out of the fridge I had to eat them.

I love them when you cook them and leave them out to cool and the grease on them goes tacky, they somehow taste quite sweet, love them like that
