Calling all vegans!

I'm catering for an event soon, for over a week and as fine a cook as I am, I know how boring some vegan dishes can be so I'd like your suggestions please because I bet you are fed up with ratatouille, mushroom stroganoff and potato curry.

What about sweet treats? What are your favourite puddings?

Thanks for your consideration

I don't find vegan food boring, there's loads you can do by substituting the meat and dairy components.

I hate mushrooms so always struggle as that's usually what's offered.

Most chillies, curries and pasta dishes can be made vegan and lots of different rices are always good.

Desserts are trickier, but you can have strawberries (or any fruit) and vegan ice cream

my daughter is veggie and uses a spirolater - look up some of the recipes for that - makes some delicious things for side dishes

Boring as in most mainstream caterers play safe and there folk will be eating with me for three meals a day for seven days.

At the weekend, it will be 150 people in total so I won't have the resources to produce anything 'adventurous'.

I can do as many vegetarian recipes as I can any other, it's the vegan element that's narrower as it can rely on manufactured food to make it more interesting. Egg and dairy free cooking can be a tad restrictive and making cream from cashews is a PITA.

Jackfruit burgers are a good vegan one.

Lots of good strong bbq sauce

Deffo do a vegan fry up in that case, can make tofu scrambled eggs

daughter has got most of her stuff from pinterest - and i know veggie stuff is readily available but so is vegan these days

Vegan brownies? Fruit pies, glazed tarts or crumble, baked peaches (so easy a touch of dairy free Marg and some brown sugar, bake or even grill) serve with some soya cream or custard. How about a summer pudding? So much soft fruit available now that would be doable

Apple crumble made in ramekins: apples simmered in fruit juice, mixed spice and sultanas for sweetness, crumble made with dairy free "butter", demerara sugar and nutmeg.

Thanks, crumbles, cobblers and pastry are on the menu and I'd forgotten about grilled peaches. Baked whole bananas too.

I don't eat carbs so I occasionally have that myself but sadly, a spiraliser is not part of the equipment of the kitchen I'm working in.

Oh ive used that its quite good.

Jackfruit is still better for texture, can make a good pulled pork impression

In the 70's it was called TVP, Textured Vegetable Protein and no matter what I did with it, it still had the texture of a sponge.

Not a vegan or veggie but do a fair bit of vegan cooking considering to get more veggies in and vary my diet.

I suggest stir fries, with tofu, look at Japanese recipes or their sauces to compliment the tofu as I find they work better.

Not sure about veggie pasta dishes, as you can use quorn but hat would sound a bit tacky at an even for me. Loook at Indian, middle eastern, north african, spanish, french recipes which use chickpeas and lentils a lot instead of meat.

There are some amazing vegetables you find at Asian/Indian/Chinese and Arabic supermarkets.

One of my favourites veg are baby aubergines and okra. I'm no vegan but do have some awesome recipes.

Roast baby spuds, courgette, red pepper, aubergine in an oven for 45 mins, season and olive oil. When done pour in tinned tomatoes, and chickpeas, finish off with coriander serve with cous cous.

Also I like bloody Mary soup, roast tomatoes, red peppers garlic, rosemary, season and olive oil for 45 mins. Wizz it up, add litre of veg stock, dash of tobasco and a shot of vodka over low heat and serve with home made bread.

I probably have more vegan recipes than meat and I love my meat.

Vegan ice cream is REALLY nice. You can get it in Holland and Barrett. They also have really varieties of vegan cheese so you could also do a cheeseboard?

There is some chat about coconut water being able to be whipped/beaten to resemble meringue but you'd have to Google that - but you could make an Eton mess if it looks straightforward. Vegan brownies are also kinda easy.

Vegan pizza for main? Tofu and veg kebabs... or a lot of Asian food can be adapted. Falafel is a winner too. Great as a burger with Fake bacon and fake cheese. God I am STARVING now.

I've done rice pudding made from almond milk, and spruced up with cashews/saffron/nutmeg and that was quite good

Otherwise if you want to do small bitey things then there's a version of strawberry cheesecake bites with the base made from a mixture of nuts/dates and using coconut oil/agave and obviously strawberries which are quite nice too.

Avoid Quorn, it has egg in.
