Swansea

Buttery mashed potatoes with a dollop of butter on top and some freshly ground black pepper.

Or a fried egg butty, where the bread is really fresh and floury, and it's slathered in Welsh salted butter. The egg white has to be crispy and the yolk perfectly runny so that when you bite into it the yolk pops and dribbles down your chin.

H.

"thick never ever beans"

Argh, now I'm not Texan, but...

I prefer using better quality steak than the crappy minced (ground) beef available here. That means in order to keep it a 'budget' meal means using beans here as, otherwise, it tastes like the same crap that you buy from the freezer aisle.

But definitely cooked down until the tomatoes lose their water and it thickens up. If you can't it with tortilla chips it isn't thick enough...

I must be one of those people who are sensitive to celery and ALWAYS taste it.

I prefer throwing in whole bunches of fresh coriander (cilantro) for pungency including the stalks.

I might be weird, but I know how I like it...
