Anyway, got back to my house and as I'd already arranged a sitter I went over my mates. Part boil then so they're still hard but a tiny bit soft in the middle. Drain them and fluff them, put a plate or saucepan lid over the pan and shake them up and down so they aren't smooth potatoes anymore. Then they go in your roasting tray with your meat. I put a tiny bit of goosefat in a small bowl and then dab it over each potato with a pastry brush. Every 10/15 mins I'll open the oven and spoon the fat over the roasties and keep turning them round.
