Pancake Day March 8th x

Do you still have a pancake on this day Shrove Tuesday ?

How to make eight good-sized pancakes, you'll need 100g plain flour, 2 eggs, 300ml milk and a pinch of salt.

Sift your flour into a large bowl and make a well in the centre. Into this, crack the two eggs, add a little of the milk and whisk. When the mixture is smooth, add in the rest of the milk and continue to whisk until you are left with a creamy consistens.

Heat your non-stick frying pan over a medium heat and add a drop of oil. Gently pour in a ladleful of batter, swirling your pan to ensure an even layer. At this point, you'll have to be a little bit patient - leave the pancake well alone for around 30 seconds or until it begins to colour around the edge.

Then, with a palette knife or similar utensil, gently loosen the pancake away from the pan, starting at the edge - if the bottom looks golden, you're ready to turn it. After another 30 seconds, it should be beautifully cooked and you can show off your pancake-flipping skills.

If you are cooking a big batch for the family, try this tip from the lovely Delia Smith - place greaseproof paper between each one and stack them on a plate over simmering water - this will keep them warm as you cook the rest of the batter mixture.

Traditionally, a simple combination of lemon juice and sugar is the way to go but who's to say you can't be a little more adventurous this year?

There are any number of fillings to choose from, both savoury and sweet - for instance for a little luxury, try salmon and chives or have pancakes for breakfast by adding bacon and maple syrup.

But if your sweet tooth is getting the better of you, try adding some blueberries and ice cream for an all-American pancake, or for the wow factor, go mad with a flambéed, cognac-soaked Crêpe Suzette... it's guaranteed to impress.

mmmm yes specially in winter, roll savoury mince inside them and cheese sauce over the top, pop in oven for 15 mins, good solid meal.

i usually make the batter the night before and leave it in the fridge. A couple of stirs of the batter and then off we go. mmmm nice

I used to have some friends who were Bretons and made the best savoury pancakes I've ever had. Wish I hadn't lost contact with them.

Loads of delicious pancake fillings to choose from but I think I'll stick with family tradition - sugar, butter and jif lemon! First one sticking and burning... next one too thick, big spoon dripping batter all over the hob and cracked eggs and flour all over the place - settle into the groove then the ones after the initial kerfuffle are just right! It's what pancake day means to me.

well you can make mix hours before you need to use it ...not sure what age your family are maybe get them to help ? and make there own even a small pan so thay can flip it not up the wall lol..... be fun and stay you made it now have to help clear up , lol

American pancakes .....

3 large eggs

• 115g/4oz plain flour

• 1 heaped teaspoon baking powder

• 140ml/5fl oz milk

• a pinch of salt

These American pancakes are great. Instead of being thin and silky like French crêpes, they are wonderfully fluffy and thick and can be made to perfection straight away. Simple, simple simple

First separate the eggs, putting the whites into one bowl and the yolks into another. Add the flour, baking powder and milk to the yolks and mix to a smooth thick batter. Whisk the whites with the salt until they form stiff peaks. Fold into the batter – it is now ready to use.

Heat a good non-stick pan on a medium heat. Pour some of your batter into the pan and fry for a couple of minutes until it starts to look golden and firm. At this point sprinkle your chosen flavouring ..

POTATO PANCAKES. Really yummmm

250g cold mashed potatoes , or 2 medium-size floury potatoes, cut into chunks

75g plain flour

1 tsp baking powder

2 eggs

125ml milk

1 rounded tbsp finely snipped chives

1 tsp sunflower oil

knob of butter

crispy bacon and scrambled eggs to serve, if you like

If you've got potatoes not mash, cook them in boiling water until tender. Drain well and mash. Weigh out 250g and cool.

Sieve the flour and baking powder onto cooled mash. Whisk eggs and milk together and add to the potato mix with the chives. Whisk the batter until smooth.

Heat a large non-stick frying pan over a medium heat. Add ½ tsp sunflower oil and a dot of butter. When the fat is hot, start to cook the pancakes. Add 1 tbsp of batter for each pancake and cook 4 at a time. Cook for about 1 min until the underside is golden brown and small bubbles appear.

Flip the pancakes and cook until golden. Remove from the pan and keep warm while you cook the remaining pancakes in the same way, adding a tiny bit of oil and butter to the pan as and when needed. Serve the pancakes in stacks with creamy scrambled egg and crisp rashers of streaky bacon.

They are both under 10 but I'll probably make the mix tonight as you said and then tomorrow we'll get up extra early and have a go at making them. I'll probably end up cleaning up the mess myself as usual.

Some good recipes here, might try one.

Thank goodness I read this, had totally forgotten. My life wouldn't be worth living if I didn't make the 101 pancakes that will be eaten later. Sure our eldest will turn up for a few as well, and now found out our grandson likes them so got to make even more!!!
