"Waste of money...When we have a meal out I want to leave the restaurant fat and full instead of having to look for a burger bar on the way home." If you are our restaraunts cooking regularly, you would develop a very serious weight problem. Do you know how rich that sort of cooking can be? Classical fine dining, from our French cousins is so rich from butter (mmmm) & cream (mmmmmmmmm). Modern European see some with a more delicate touch. See Rene Redsepi's Nomo, Copenhagen. The one in Leeds has a waiting list that goes up to Rapture. Although with Michael O'Hare cooking I don't really mind. Prawn brains with sea urchin juice is not top of my list of things to try. | |||

"I used to go to a Caribbean place near where I used to live, the food and the atmosphere was like being at an aunties house, it was so special to the local Caribbean community that the owner used to be known as auntie. She would have never got a Michelin star in a million years, but I doubt if you got all the Michelin stared chefs in the country to try you would never get them to re create her brown stew chicken, or salt fish fritters. My point is, chefs come in two flavours, art and science, science is boring food, technically brilliant, but bland, the best food comes from the heart, I'd be amazed as good as he is, if Marco Pierre White could cook the way auntie used to, and keep control of the place like auntie did, saw her throw two yardies out by their ears (literally) for "cussing and foolishness " It's the heart you put into a dish, not how many awards" Good food is good food, don't need stars or other accolades. Mak's Noodles (Central, Hongkong) has a star. However, when one does over 80 hours a week in kitchens and paid less than say a bin man.. Got to have heart to work in those kitchens. Got to. | |||
