What's for dinner tonight, Sun 27 Feb?

Linguine with smoked salmon, cream cheese and finely chopped Savoy cabbage, with a hint of garlic for me!

I shan't make it with ricotta cheese as I don't like the gritty texture.

What is everyone else having or had?

Only just had roast chicken dinner.

Probably some sort of salad later on. We've got plenty of yummy dressings to zing it up. Trying to think how I can use our sweet chilli sauce too.

Got plenty of salmon, chicken etc to go with it

Yesterday had some smoked mackeral, that I warmed through in pan, removed the skin, and then shreaded the meat. Mixed it with sweet chilli sauce. Served on bed of lettuce, spring onion, celery and tomato, and drizzled over some honey and mustard salad dressing.

Might do same again but using salmon instead

Yes it was a little chilly under the awning - but bought the meat yesterday when it was sunny so I was damned if we didnt cook it tonight! LOL x

I cook the chicken with some sliced onions then throw in tinned tomato and a big dollop of sweet chilli sauce, and some extra chilli flakes. Bit of fresh ginger is nice too. Shove it in the oven until the chicken is cooked.

Great with big pile of green veg.

Made a pasta sauce with cream cheese, spinach and tomato puree instead, and it is yum!
