"Tea requires boiling water to brew properly, whereas boiling water scalds coffee and causes a bitter taste. So milk in first for coffee, but water first for tea." Au contraire mon ami ..... Boiling water impairs the taste of any brewed drink. My tea is made with water that is 85 to 90 degrees. Never boiling. Coffee a little hotter and as people say ....... if you MUST use boiling water then cover the coffee with milk to prevent scalding of the granules ( if it's instant ) If it's a cafetiere of freshly brewed allow the water to cool for five mins afer boiling before brewing. trust me

"So - whether it be tea or coffee - do you put the milk in before or after? Does it make a difference to the brew? I know what I think to be right but want your opinions please?!" Milk first for instant coffee but you must allow tea to brew in properly in as hot a temp as possible (warming the cup if possible when using a tea bag so it's milk after.
