"Definitely slow roast, rub olive oil into the leg season with sea salt ( not to much though ) then add sprigs of fresh Rosemary and thyme cover with loose tin foil and cook at about 120 for three hours then take the foil off for another 30 mins, also a good tip is to put a dish of water in bottom of the oven it will ensure the lamb doesn't dry out but keep topping this up as it evaporates xx" I've covered it in wine ![]() | |||
