"I've just made some, don't normally bother but mrsdpt wanted some and she's not too well, so how could I resist. Didn't have a whisk so put a fork in the end of my drill And totally agree with the packet mixes. Flour, milk, eggs.....it's not difficult 100g flour 2 eggs 300ml of milk Will make around 5 decent sized pancakes " You only need 1 egg with those amounts | |||

" You only need 1 egg with those amounts" I was always told to use a second egg too (just the yolk, actually). It supposedly makes them slightly more robust for tossing, and more bouncy when they hit the floor! (I suspect the advice originally came from the british egg-laying society though, just like my Dairy Cookbook seems to just add cream to everything ) | |||

I don't use packet mixes for anything, as a student who actually cooks it's cheaper for me to buy flexible ingredients that I can make all sorts of different meals with rather than a packet for everything!
