Lazy but quality cooking!

So, I've been buying some new kitchen stuff.

I love cooking but sometimes I just want it to be fast and effortless.

One thing I bought is a slow cooker! It's brilliant for when I can't be bothered. Just chop up the veg, etc, throw it in with some stock and a few herbs. 5 minutes preparing, then just leave it to cook for a few hours.

Do any of you have any good ideas for quick but good meals?

Fish finger sarnies with a side of salad? Surely a squirt of tomato ketchup is one of your five a day?

Not very original but a good old beef stew with dumplings. Cooks perfect in the slow cooker. Yummy in this horrid weather!!!

Bang a whole sea bass in some tin foil, olive oil, squeeze of lemon, glug of white wine, salt, black pepper, cover and put in a hot oven for 15-20 mins. Put some green beans in salted boiling water for two- three mins, butter up a little ciabatta bread and pour yourself a glass of that wine and now you have a stonking meal fit for a king in 20 minutes flat.

Thank us later.

Fish fingers are healthy if you grill them in the same kitchen that contains salad.

I haven't used my slow cooker since I got my cat... I don't have a door on my kitchen so don't really feel that comfortable going to work and leaving it on. I should use it at the weekend though.

There are loads of slow cooker recipes out there... the BBC Good Food website is always throwing up useful recipes.

Pepperoni

Red onion

Cherry toms

Chop all of those, fry them off while cooking some penne. Add the pasta to the pan, throw in some double cream and pesto. Loads of pepper and some chopped chives to finish.

Yum, that sounds nice, I'm always looking for ways to use up coconut milk. I bet that would make a nice cocktail blended with rum.

A cheeky dish that is actually easy to make...

Spicy squid salad

Put some oil in a wok and warm up.

Boil some water in a kettle.

Grate some ginger and lime zest into some flour and add some chilli flakes.

Grate some more ginger and add half the lime juice to a small locking tupperware tub with a some quinoa in. Add boiling water. Put in microwave and heat on full power for 4-5 mins.

Take the prepped baby squid, slide a knife inside and slit down one side and open up. Cut into squares and dredge in the seasoned flour. Flash fry in small batches. No more than 20 seconds.

Serve on a bed of salad leaves with pomegranate, a grind of sea salt and a squeeze of lime juice with the quinoa on the side.

Should take no more than 10 mins...

Another quick one...

Cut some chorizo into chunks and add to a hot griddle pan. Add some chopped chillis and some spring onion..when the oil has released add some fresh scallops to the pan, turning once after about 45 seconds....add some finely sliced spring onion tops to finish

And another..

Boil some water in a pan, add a veg stock cube and a dash of Worcestershire sauce. Add some pasta.

Drizzle some asparagus with olive oil, and a crack of salt and pepper and put on a baking tray in a hot oven.

Mix some wholegrain mustard and honey in a bowl...glaze a couple of pork steaks and put in a hot pan with a little oil.

As the first side is cooking finely chop some garlic, sweet pepper, garlic and shallot. Add to the pan with a sprinkle of chilli flakes. Cook until the garlic goes a little bit crunchy.

Again. Less than 10 mins start to finish

Pulled pork is easy to make and you can eat in a rolls or in a baked potato, with rice loads of ways and freezes well. . 2 medium onions, thinly sliced

4 medium garlic cloves, thinly sliced

1 cup chicken stock

1 tablespoon dark brown sugar

1 tablespoon chili powder

1 tablespoon salt,

1/2 teaspoon ground cumin

1/4 teaspoon ground cinnamon

1 (4-1/2- to 5-pound) boneless or bone-in pork shoulder (also known as pork butt), twine or netting removed

2 cups barbecue sauce (optional)

Place the onions and garlic in an even layer in the slow cooker and pour in the stock . Combine the sugar, chili powder, measured salt, cumin, and cinnamon in a small bowl. Pat the pork dry with paper towels. Rub the spice mixture all over the pork and place the meat on top of the onions and garlic. Cover and cook until the pork is fork tender, about 6 to 8 hours on high or 8 to 10 hours on low.

Turn off the slow cooker and remove the pork to a cutting board. Set a fine-mesh strainer over a medium heatproof bowl. Pour the onion mixture from the slow cooker through the strainer and return the solids to the slow cooker. Set the strained liquid aside.

Using 2 forks, shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded meat to the slow cooker, add the barbecue sauce, if using, and mix to combine. If you’re not using barbecue sauce, use a spoon to skim and discard the fat from the surface of the strained cooking liquid, and then add 1/4 cup of the liquid at a time to the slow cooker until the pork is just moistened. Taste and season with salt as needed. Aga is good in the bottom oven .. But when your out at work all day this is nice to come home too if your into slow cooking . And its a cut of meat that don't cost loads and will feed 6/8 easy for a family get together .

Put some pasta on. Fry pancetta, onion, mushrooms and lots of garlic in plenty of olive oil. Stir through cooked pasta and top with plenty of parmesan. Yummy and only takes 10 mins.

I'm getting hungry now.
