She might be anticipating a big night and doesn't want to be held to getting the last train home, on her own, d*unk and perhaps vulnerable.

Similarly, she might have found herself a fuck buddy and wants to use her work night out as an excuse to stay in a hotel and have him fuck her all night.

Who knows...why don't you ask her?

How about this, why don't you offer to stay over with her? Let her have her work night out onher own with her collaegues and then be waiting for her in bed when she gets back all tipsy and horny? See what she says to that.
