Omelette

Having an omelette for lunch and can't decide on what to add

Was thinking. Mushroom, ham, cheese.

Any suggestions ?

What's your favourite filling ?

I clearly do it wrong, I add mushroom, ham, tomato, cheese, black pepper, basically anything that's in the fridge that'll work.....

I might add a finely chopped shallot

No garlic as out tonight.

North of The Wall - youll need your vest

I never think of making omelettes at home but on a road trip the other week I stopped in the middle of nowhere to get a drink at 6am and without ordering anything the guy brought over an omelette and bread fresh out of the oven.

Plain but sprinkled with local cheese and it was bloody lovely

I batch made a curry and bolognese yesterday and have a few left overs. Mushrooms. Peppers and shallots that I need to use up.
