Lucky thing. Ribeye is my favourite and I like it rare just past the point of still mooing and with onion rings and corn on the cob. Not that I can have it anymore as I can't eat red meat so I'm trying to forget how good it tastes

But when I ate meat, I liked my steak well done, with meat gravy, mashed potatoes, and cooked carrots.

"I've only ever eaten steak once and it had blood in the middle. I ate the edges and was a contributing factor to becoming veggie. "

It's not blood

Nearly all blood is removed from the meat during the slaughter process. Only an extremely small amount of blood remains within the muscle tissue.

Red meats, such as beef, are composed of quite a bit of water, mixed with a protein called myoglobin, and ends up comprising most of that red liquid.

The more myoglobin, the redder the meat

However, a massive Porterhouse cooked Blue. Then warmed on the pass or oven. Served with garlic mash and baked veggies or salad and chunky chips. Delicious.

We normally get sirloin (our butcher gets it well-aged from Scotland and it melts in the mouth when cooked rare)

I use rump for posh burgers.
