Fish skin..

We see all the top chefs cook it with the skin on. They want it nice and crisp.

Do you eat the skin? I'm bemused; I can't think of anything less appetising!

If it's done well then crispy skin goes well with the rest of the fish.

Otherwise I fillet it and leave on the side.

It has to be crisp (not flabby....shudder) so it's a crunchy texture I guess. Tastes of the fish, but more so. If you like crispy chicken skin with your chicken......you should like crispy fish skin with your fish!

I always taking off skin before cooking. Especially from salmon.

Fish skin isn't as nice as chicken skin... But whole roasted fish, grilled, pan-fried or barbecued, the skin protects the fish inside, so leave it on whether your going to eat it or not.

Like chicken skin, it only works when crisp (not soggy or over-burnt).

Prefer it if it is crispy, but will still eat it if it's not. Will only eat crispy chicken skin though. I also eat the fat & rind off pork chops when that's not crispy

Do you suck the head too? West Indian parents here...

OP, I don't eat fish or chicken skin but I'd leave them on for cooking to ensure the meat remains moist and gets the flavour from the skin.

Someone usually takes my discarded skin from my plate and pops it in their mouth

We absolutely love fish it's our favourite meat. If we cook seabass or mackerel for example it's rubed with salt, pepper, garlic, parsley and olive oil and baked on a high hear till the skin is crisp and golden and it tastes bloomin' great. If we cover it however, and get a steam effect the skin is pretty horrible we find and always remove it, think it's the sliminess of it which is off putting for us.

Steamed turbot this Saturday, yum!

Hot, crisp, creamy with salmon oil and flavour, slight salt and slight sweet flavour.... Hey, don't shoot the messenger!

I eat alot of fish but never the skin I do keep it on for cooking but before serving remove the skin and the cats enjoy.
