It's nice when you make a meat ragu as an alternative

I can get it from word go to plate in 8 minutes.

Tip for those trying it out...

Keep the toms moving so they don't spit too much.

Squash a little with a masher ( don't mash just crack. The juices form the sauce )

Use a tin of ready sliced olives from ASDA.... cheap n cheerful at about 37p.

I'm feeling a simple puttanesca sauce on spaghetti or linguine at the moment. Adding calamari, clams or just having it naked. Proper lush.

Germany

As plow pole have said, each region is very unique.

I love parmigiana: layered up like lasagne but with aubergine slices and a slow cooked sauce and mozzarella.

Tortellini in broth from Bologna is great too.

However, Italian street food is amazing. Proper focaccia from Genoa, arrancini from Palermo...

Mmm

Spent about 2 months in Italy last year and what I enjoyed most is just the simple stuff. A good peice of meat with grilled veg, or a really good bowl of pasta. But the pizzas, propper ones! Oh my god! No wonder I put a stone on during my last trip!
