When you go to work - do pack up a lunch or buy it?

Also if it's a packed lunch, what to do pack up?

I need ideas-

I'm not working at the moment but I'm a packed lunch person.

I avoid sandwiches cos I'm not a big bread eater. I have a wide mouth thermos for taking hot food and a good repertoire of salads and finger foods for cold.

Hummus and veggie sticks is one of my most basic ones and if I'm out of hummus I'll whack a can of chickpeas or white beans in the processor with some garlic, lemon juice and a drizzle of olive oil.

I also like a flask of homemade soup.

Sarnies & 3 pieces of fruit.

Occasionally I'll grab a "snack pot" or pasta if there's a cheap yellow ticket bargain

I don't but all I'll suggest is you don't stuff in too much crap like some people do. Fruit is good. Maybe one bit of chocolate or crisps as a treat.

I sometimes have crisps if I have a sandwich or wrap they kind of go hand in hand

Yes there is TD and uv discovered McCain jackets too which are ideal to just bung in the niceo and done in 5 min.. I only get 15 min lunch, however I do be naughty sometimes and half an hour.

If you've had a roast chicken the little scrappy bits that are too small to carve off so you have to pick them off are perfect for this kind of salad. Canned white beans are good too, especially with a vinaigrette.

Whatever your cooking for tea have a think about if you can use the leftovers in your next day pack up, sometimes it's easier to cook a little more and let it go cold. And if you're chopping veggies for tea it's easy to chop some extra for a salad whilst your at it.

It's also cheaper to do an extra piece of chicken or meat and make a pack up then it is to buy a sarnie.

Then leftover Chilli, bolognaise etc is your friend! Especially if you've got some rice or pasta left too. Or take a small amount of Cous Cous in a tupperware bowl and just cover with some water from the kettle. By the time the sauce is done the Cous Cous will be too.

What about tzatziki?

Small tub of natural yoghurt, some mint (mint sauce will do in a pinch) grate some cucumber and squeeze it between your hands to get rid of excess liquid and mix together. You can add a little grated garlic too if you don't mind being a bit garlicky.

I'm on a budget but I'm also on a diet and not a sandwich fan. If I don't want to blow the diet I have to make sure I've got food for when the munchies attack!

The key is to be self diciplined in that case. I used to work for boots, King of the lunchtime meal deal. They also had an excellent staff canteen, with an amazing chef. It was difficult but I tried to take a packed lunch as often as I could because of cost

Pretty much every day I do the OH a fresh salad. Today's was pasta with pesto, roasted butternut squash and roasted broccoli topped with tarragon and sweetcorn tuna.

Don't forget fish. If you find salmon on offer then you can cook in the microwave with a little lemon juice very quickly, or wrap in foil and bung in the oven when you're cooking something else. Then just flake in with leftover potatoes or pasta or rice, add veggies and mix with mayo or vinaigrette or sweet chilli sauce.

Get a couple of different melons if they're on offer and prep into a tupperware tub and keep in the fridge then just help yourself to a portion to take to work every day. If the melons are not quite ripe slice and orange in as well.

Squeeze a little lemon juice into the fruit salad and mix; stops the fruit going brown. I also tend to use apple juice as a liquid base if needed - keeps for a few days in the fridge.

In coronation chicken yes, because you mix it up when cold.

Be careful with the 'fat-free' yogurts. Many of them are skimmed milk + thickener (such as carrageen gum or xanthan gum) and will split if you add them to very hot foods (such as to finish a Korma etc).

when im in stafford for work i usually bring my lunch as id have to walk to get lunch and i wont pay station prices.

but we are lucky we have a cooker and microwave so sometimes we all pitch in and cook something or throw a chicken in the oven a load of salad and crusty bread

but packed lunches saves me a bomb!

I like making things so do all sorts of pies .. ...even do a cheese and potato pie good hot or cold ..make them at weekend put into freezer too.

In coronation chicken yes, because you mix it up when cold.

Be careful with the 'fat-free' yogurts. Many of them are skimmed milk + thickener (such as carrageen gum or xanthan gum) and will split if you add them to very hot foods (such as to finish a Korma etc).

Ingredients for Rachel's organic Greek style coconut bio- live yogurt:

Organic yogurt (from milk), organic sugar, organic cream (from milk), organic coconut (4.8%), organic rice starch, organic concentrated lemon juice

You should be good with that - if your cooking with it, add it at the end and try not to boil it. Its great to finish a curry sauce with, adds creaminess, a little bite and hint of coconut with none of the fat

I need a good tasty curry sauce (korma style) that's healthy.. I cooked a load chicken yesterday so want to make..

I work from home, so I have what is in the fridge if I'm hungry, if not I wait until dinner. But general a salad with cous cous and grilled chicken, or a cup a soup, I am adventurous NOT! lol

Today I've got home made soup, and fruit and a couple of little cheese pieces for snacks.

I need to find alternative healthy snacks! I like little pieces of cheese too.,

Hard boil half a dozen eggs and keep them in the egg tray in your fridge - they'll keep happily for up to a week. Filling, high protein and much better than a lot of snacks. And you can use in salads or sandwiches too.

Get a couple of different melons if they're on offer and prep into a tupperware tub and keep in the fridge then just help yourself to a portion to take to work every day. If the melons are not quite ripe slice and orange in as well.

I have quite a bit of different fruit in the fridge and would like to make a fruit salad.. What's the best way of keeping fresh and not going brown and soggy?

Squeeze a little lemon juice into the fruit salad and mix; stops the fruit going brown. I also tend to use apple juice as a liquid base if needed - keeps for a few days in the fridge.

I usually put a couple of oranges in. There's a way to prep them using a bread knife. Slice the top and bottom off so it stands up on your board without wobbling. Then use the knife to cut the rind and pith off in strips moving around as you go.

Once it's pith (the white bit) free you can either just slice or chop it or you can hold it in your hand and carefully cut between the segments so you only get the flesh and no segment skin. Hold it over your fruit salad if you're doing this then squeeze the last of the juice out of what's left.

This works on all citrus fruit.

I take a packet of Oats so simple when I have my break at the garage otherwise it's a butty and a brew from a takeaway, don't like taking butties to work cos by the time it comes to break time I don't fancy them anymore lol
