There is a Victoria sponge in the oven, the aroma of which is gently wafting through the kitchen when cooled I am going off piste and sandwiching with double cream and fresh strawberries (the cake you filthy devils).

What would be your choice of filling?

I make mini Victoria sponges and put homemade jam and buttercream in them. I don't eat them, just feed other people, they seem to go down well

Hmmm. I'm not sure on that. I wonder what the cream would be like if I whipped it with a little coconut milk.....would it prevent it thickening?
