I tried monk fish for the first time at the weekend, the jury is out, I think it needs something spicey with it.

Very meaty fish, but tasty when marinated with the right ingredients

Meaty is definitely the word. I did it with parma ham on top and baked it and served it with a little bit of tomato salsa, it was all too mild. As you say marinated in something a bit more lively was they way forward.
