Doubt if you've got them if you have no toms or mushs, but aubergine and courgettes are nice, especially if you you coat them in salt for half an hour to dehydrate them a bit and cook them in the bacon fat on a highish heat.

"Thats a new one, must try it sometime."

Trick is make sure you wash the salt off for obvious reasons and dry them before frying, then they'll crispen up.
