Curries and Chilli's mainly.

Recently gone from the normal everyday Chilli to 'Scotch Bonnett's. Great flavour, not overly hot.

The firest little bastard I have tried is a dried Spanish one they use with 'Gambas al pil pil'. Its a Prawns in hot oil type tapas

Don't piss about using mince.

Get beef medallions, shave cut them cross grain really thinly

usual of beans, onions, etc

Get some Ancho Poblanos and Guajillos in there after a good soak overnight in hot water

Really low heat for a looooonnngggg time

then just before serving a whole load of grated raw cacao into it.

Enjoy

Pretty much everything, though yet to try it on me porrage.

Every window ledge in my flat has dissapeared under my tabasco plants, which keep my vodka and vinegar nice and rasty

I love chilli, but don't buy it often.. so if I do and have some left over, to save it going off i slice some up (if its spicy) and let it steep in a bottle of oil with some garlic and ginger to use as a stir fry type of oil, or very finely chop it, let it dry thoroughly and put it with all the seeds in a salt grinder with some rock salt, black peppercorns and dried garlic flakes

I wish I knew! bought them from a stall at a foodie fest but failed to get a business card or anything with even a name on... shame, I said afterwards they'd have been great for handing out at Halloween - trick AND treat!

I buy a bag full of whole fresh ones (or grow my own) and stick them in the freezer - they only take a minute or two to defrost enough to chop up with a decent cook's knife

Ah depends on the chili as well, jalapenos make the vodka warm but give it a bit of a grassy taste. Tabascos add a sweetness to the vodka, but if left to infuse for a while can make it a bit hot...

I once downed a large shot of homemade chilli vodka immediately before giving a speech at a club(vanilla, not swingers!) function - full back tie and ballgowns affair. It didn't taste too bad to be honest but that's probably because it barely touched the sides. All was well until a couple of minutes into my speech when I realised there was a fire in my torso that felt like I was about to spontaneously combust... to cut a long story short I had to break off and spent about ten minutes outside (in January) stripped to the waist before I'd cooled down enough to continue..

Grow my own. I have a tendency to use it more often than I perhaps should

My favourite dishes to use it in are chilli con carne, burritos, fajitas and enchilladas, curries of many varieties, arrabiata sauce, tomato and chilli sauce, omelettes, pizzas, chillied fish, chilli jam/dips/salsa and salads....and more lol
