I can't make them rise!

Scones. I remember making perfect scones with my Nan. Now I just get flat miserable looking things come out the oven. They taste great just impossible to slice in half.

Any tips?

Do you leave the dough to stand? That could be why they aren't rising. Also the recipe.

Dough too dry? Make sure your measurements are correct and your oven is pre-heated properly

Dont handle them too much and dont roll the dough just pat it out and cut them quite thick.

Recipe os out the bero book my nan had forever

8oz selfraising flour

2oz marg

Pinch salt

1oz sugar

1 egg

Oven at 220

Ill give them another go tomorrow and fingers crossed they get bigger!

Ill leave it to stand not roll and barely touch it

Use a good grade flour too. I noticed the cheap flour doesn't work as well in any recipes

Don't leave it to stand, it's best to make them just before you're ready to bake. Made some with the following recipe at the weekend which worked well:

400g (14 oz) plain flour

100g (3 3/4 oz) caster sugar

1/2 tsp baking powder

1/2 tsp bicarb of soda

3/4 tsp salt

175g (6 oz) soft butter

250ml (8 fl oz) buttermilk

- Yep, good flour is always good. If it's been hanging around a bit, try adding a bit of baking powder - but I usually ditch it in favour a=of a new bag
