Make a nice vegetable curry with that. Or even fish actually.

Slice down the middle, remove some of the flesh and stuff them with something scrummy. Top it with a bit of cheese and bake.

Courgettes can be used to make a nice chocolate cake ....

Similar to using carrot shavings to add moisture to a cake that tastes nothing like carrots, you can use courgette shavings to give the moistness to a chocolate cake.

But it's one for broad minded bakers....

How big are they? Sometimes the homegrown ones are huge!!! I love courgettesoup. Fry onion, add courgette, stock cube, blend, done! Easy peasy!

dumfries and galloway

Make a lasagna, using them instead of pasta to layer it up...obviously you need to slice them thinly...it's lush

Frittata? You do need to fry them well to get rid of moisture before you add the egg.

Or ratatouille.

Slice thinly, layer up with onions and tomato, black pepper and some mixed herbs, top with a few knobs of butter and some cheese, (mustard seed cheese is awesome for this) and bake.

Lush with just bread to soak up the juice but also as a veg side dish

Or make chutney
