Wish it was the Algarve! Aberdeenshire

Just been given freshly caught monkfish, ugly bastards by the way. Anyway have tailed & skinned them, so any suggestions on how I can cook them? I'm sure their are some decent chefs between you lot to give me advice..

Wrap it in foil add a lil white wine, lemon juice, pepper and herbs.

Will only take 20 mins in the oven.

You could add grated cheese and put it under the gril just before the end.

I would roast some meditteranian veggies, boil some new potatoes and roast them too. Add garlic and corriander (or whatever herb you used with the fish) 10 mins before the end. Boil the potatoes for 10 mins first and squash them so they open up, but dont mash them. You'll get crispy bits once cooked.

Id buy a packet sauce too

well said chef !! I agree and you also could wrap it in parma ham to keep fish moist and give it a bit extra flavour

I almost added about bacon or even better, parma ham, that little bit of natural saltyness would just finish it.

quality fish to cook with and eat, ugly as fuck but a decent treat. used to be £5 a lb 20 years ago, god knows how much now.

Sounds good, in fact I do have a parma ham hanging in my outhouse, was given it at Christmas, will it be still okay to use or will I get a bad case of food poisoning?

Love the suggestions though, between them I could cook up a storm!

If its still in its netting it should be fine I think as its a dry cured meat
