It could be due to the stock why it tastes better the next day. Happen with Spag Bol too (eg)

This dish dosent sound appealing to me sorry, I wasnt sure if you were talking Cottage Pie at first.

Maybe I have the wrong picture in my head.

Stovies is onions and potato cooked in some butter (or lard!) until the potato is soft and (usually) whatever meat you have left over from your roast stirred through. I tend to use corned beef as that's what mum used most.
