Now I know there are a few bakers in the forums, now I'm off today and really looking to make something nice but that I might be able to package up and send to a friend. Any ideas?

Oh and is it too late to bake a decent Xmas cake? X

If you are going to make a boozy Christmas cake its usually best to soak the fruit for approx 6 weeks before hand in my opinion. If not make a couple of cakes in loaf tins, easy to wrap up and package and less likely to get damaged. I would maybe try a decent coconut Madeira and a Banana Cake or even a Lemon Drizzle Cake.

Gingerbread or parkin improve by keeping as does some carrot cake.

And I've made Christmas cakes just a week before Christmas before - I'll send you the recipe when I get back home.

I am making cakes coffee and walnut and cupcakes and a carrot cake with sweet cream cheese filling. And Bread and scones today .

I made spiced biscuits and posted them to a friend, the trick is making sure they are well wrapped and protected.

Oh right well thank you n seeing as ya gone n let cat out the bag I'll ensure I'm in when the postman arrives. Oh n you HAVE remembered I don't like icing?
