Use a cocktail stick or skewer to pierce the citrus all over before insertion.

And I prefer to stuff a bird under the skin instead of in the cavity - it protects the breast and doesn't increase cooking time and also doesn't increase the risk of salmonella!

Part sliced (flower like) large eating apple keeps it moist ... Stuffing on the side as I like it crispy on the outside and soft in the middle.

Think my mums bird would be a little pissed off if I tried to stuff anything up his arse.

We have ours on the side, but put an onion in the cavity and butter under the skin of our xmss bird x

Butter is the way to go and also try turning the bird upside down so the juices run into the breast, that will keep it nice and moist. I usually bone out the legs and put the stuffing in there and roll and tie it, this way its great cold afterwards as well...
