Been hickory smoking two racks of pork ribs since 3pm, St Louis style (coated in french mustard, then liberally rubbed with spices and brown sugar).

Half an hour, I begin saucing and an hour later I'll be pulling my pork. Anyone fancy a bone? lol

They were oooffffin amazing lol been smoking for years. Started on beef jerky and salmon, then started following the deep south US bbq contests.

They were spicy hot, sweet, smokey and so tender they nearly fell right off the bone, just enough to get your teeth into :p

Thx I use a Weber bbq grill. They have an ash can and vent underneath so you always get fresh air under the coals and there's also a decent vent on the lid, perfect for smoking while you grill.

Otherwise, if money weren't an object, I'd have a whole shed set up for smoking with cabinets and everything

Just wet your woodchips in apple juice for a few hours and then put a handful over the coals and cook on an indirect heat for a few hours

Next year when i get my own place I'm building a massive BBQ outside, with a little out door kitchen type thing around it (gonna cast the worktops myself out of decorative concrete) then it's just the furnace/foundry for ally/iron casting and a nice smoker shed before starting on saving for the machines for the workshop (might try my hand a building a lathe if i can get the furnace big enough to cast the bed) :p

Good luck with that and do your homework. You'll need wood for the pit too because that'll need a lot of fuel to cook in an open space.

I've planned a BBQ pit with someone before. It's an actual science lol

What is it with men and barbecues? It's like the most masculine kitchen or something. Beer and meat and ball scratching lol

Hahaha (deep breath) well...

Fire, meat, outdoors, eating LOL

I got a food safety certificate and have been into cooking for a while, so personally, I enjoy the art. It's relaxing and meditative. Plus, the smell of smoking wood in autumn/winter mmm
