"Cut a large onion in half and stud with cloves. Simmer till soft in either milk or a mix of milk and cream. Remove the onion and add fresh bread crumbs till you get to your preferred consistency. Season with salt and pepper, beat in a knob of proper butter and grate nutmeg over to serve. For the breadcrumbs just save the ends of loaves allowing to dry out. Then blitz in the food processor or grate. A variation is to reserve the onion, remove and discard the cloves then blitz in processor and add to sauce. "You can save breadcrumbs by either drying them out in a very low oven and keeping in an airtight container or by freezing in a bag - I freeze so I don't have to worry about them going mouldy and you don't even need to defrost just use them straight from the freezer. Bread sauce can be made in advance, just a little thinner, then either refridgerate or freeze. Bring to room temp and heat in a pan stirring often." I brought 2 bags of fresh bread crumbs from waitrose and just froze them as I don't have a food processor...so thanks for the tips and recipes | |||
